Ingredients

4 barramundi fillets (about 150 g each), skin on or off

2 tbsp olive oil

1 lemon, sliced

2 garlic cloves, finely sliced

4–5 sprigs fresh thyme (or substitute oregano)

Sea salt and freshly ground black pepper

Method
