Ingredients
4 barramundi fillets (about 150 g each), skin on or off
2 tbsp olive oil
1 lemon, sliced
2 garlic cloves, finely sliced
4–5 sprigs fresh thyme (or substitute oregano)

Method
1. Preheat oven: Set oven to 200°C (fan-forced) and line a baking tray with parchment paper.
