Tender Greek Yogurt–Marinated Chicken
This tender Greek yogurt–marinated chicken is built around protein, simplicity, and ease. Greek yogurt softens the meat naturally while keeping the ingredient list clean and functional. It’s a reliable way to cook chicken that supports strength, recovery, and consistency.
High-heat broiling keeps the chicken juicy while creating gentle colour on the surface. Paprika, thyme, and lemon add flavour without weight, making this a dish that works just as well for weeknight nourishment as it does for casual sharing. Straightforward cooking, done properly.
Ingredients
(Serves 4)
500-600g chicken tenderloins
1 cup Greek yogurt
Zest and juice of ½ lemon
2 tsp paprika
1 tbsp olive oil
2 sprigs fresh thyme, leaves picked
½ tsp garlic powder
½ tsp onion powder
Sea salt and cracked black pepper, to taste
Method
1. Prepare the marinade: In a small bowl, mix Greek yogurt, lemon zest and juice, paprika, olive oil, thyme leaves, garlic powder, onion powder, salt, and pepper until smooth.
2. Marinate: Place chicken tenderloins in a large zip-lock bag. Pour over the marinade, seal, and massage gently to coat evenly. Refrigerate for at least 30 minutes, or up to 24 hours.
3. Cook: Preheat oven to broil/grill. Line a baking tray and lightly oil. Arrange chicken in a single layer and broil for 10–12 minutes, turning once halfway, until lightly golden and cooked through.
4. Rest: Remove from oven and rest for 5 minutes before serving.
