Fudgy Cottage Cheese Brownies

When you’re craving something chocolatey but still want to feel good afterwards, these Cottage Cheese Brownies are the answer. They’re rich, fudgy, and surprisingly nourishing, made with simple ingredients and no refined flour or sugar.

These brownies are intentionally simple. Cottage cheese provides a natural protein boost and a creamy base, while cocoa powder delivers that deep chocolate flavour without the heaviness of traditional desserts. Peanut butter adds richness and healthy fats, helping keep you satisfied for longer.

Ingredients

(Serves 9 squares)

1 cup cottage cheese

1 egg

2 tbsp peanut butter

¼ cup stevia (or to taste)

½ cup cocoa powder

Pinch of salt

½ tsp baking powder (optional)

½–1 tsp vanilla essence (optional)

Method

1. Blend the base: Blend cottage cheese, egg, peanut butter and stevia until smooth.

2. Add dry ingredients: Stir in cocoa powder, salt and baking powder (if using). The batter may be thinner depending on the cottage cheese, this is normal.

3. Add vanilla (optional)

4. Bake: Pour into a small lined baking dish (approx. 10–15 cm). Bake at 160°C fan-forced for 20–25 minutes. Brownies should be just set with a soft centre.

5. Cool completely: Allow to cool before slicing — they firm up as they cool and become extra fudgy.
